Medieval times;

    Several flowers, patterns and colors were used in Medieval gardens symbolically.  For instance, the color, red, was symbolic of the blood of the Christ while white was for the purity of his mother, Mary.  The symbol of the cross was a familiar pattern in the walking paths or a flower bed and water was associated with purity and baptism.  Since there are few actual documents from this period we rely on artists to tell the story of the design styles through paintings and tapestry, albeit idealized.
